Happy Friday! I don’t know about you, but i am always in a better mood when i know the weekend is here. This by far has to be one of my go to breakfast meals. It is absolutely delicious and takes no time at all to make. Be sure to give it a try and comment below what you think. This dish can be made without meat for those of you who are vegetarians or trying to be a bit more health conscious. What you need:
- Diced medium sized onions
- 1 bag of spinach (8oz)
- Pre-cooked Beef Sausage Link (Sliced into quarter sized pieces. )
- 8 eggs
- Cayenne Pepper (Optional)
Prep Time: 20 Minutes. Cooking Time: 30 minutes.
In a Pot, combine oil, chopped onions, diced beef sausages, cayenne pepper (optional) and a pinch of salt. Allow this to cook down until the onions are softened and sausage is slightly browned.
Add in the bag of spinach little at a time. The spinach cooks down to almost nothing. Make sure to not cook this for too long as to destroy all the great nutrients in the leaves.
Transfer the mixture into a baking pan as pictured above.
Preheat oven to 400 degrees
In a separate bowl beat your eggs together and add salt to taste. Be mindful that you have already seasoned your spinach mixture.
Pour the egg mixture over the spinach mixture and place in the oven to back for 15 minutes at 400 degrees.
You should have something similar to the picture above. Pop two waffles into the toaster, butter one side and place a slice of your frittata into the middle for a savory buttery heavenly goodness!
